2018 Reserve Cabernet Franc
One of Covington Cellars' flagship varietals, our Cabernet Franc is an important part of our story. The 2018 Reserve Cabernet Franc was fermented entirely in Spanish clay Tinaja. These clay vessels give the wine a distinct, silky texture and an aroma of cooking spices along with the benchmarks of herbs and black fruits that always make Cabernet Franc so compelling. The vessels do not retain heat, so the wine fermented at a long, slow pace which built elegant tannin structure. 100% Cabernet Franc from three of our favorite vineyards, Seven Hills West in Walla Walla, Pollard Vineyard in the Rattlesnake Hills and Dineen Vineyard in Yakima Valley.
