2017 Reserve Cabernet Franc
One of our Flagship varietals, our Cabernet Franc is always 100% and we decided in 2016 to elevate that even further. The first of its kind in the Covington family, the 2016 Reserve Cabernet Franc was fermented entirely in Spanish clay Tinaja. These clay vessels give the wine a distinct, silky texture and an aroma of cooking spices along with the benchmarks of herbs and black fruits that always make Cabernet Franc so compelling. The vessels do not retain heat, so the wine fermented at a long, slow pace which built elegant tannin structure. 100% Cabernet Franc from two of our favorite vineyards.
